Gluten-Free Brownies

What You'll Need

  • 1 1/4 lbs unsalted butter
  • 2 1/2 lbs callebaut chocolate
  • 1 3/4 lbs granulated sugar
  • 1 lb eggs, beaten
  • 1 teaspoon vanilla extract
  • 3/4 lbs sour cream
  • 1/3 lbs gluten-free flour
  • 1 1/2 teaspoon salt


Melt butter with chocolate in a large sauté pan over medium heat on the stovetop. Stir until melted. In a mixer, either hand-held or upright, blend eggs and sugar, mix well. Add melted chocolate mixture. Add vanilla and gluten-free flour. Scrape down bowl and blend well. Add sour cream and salt, blend well again. Pour into an 11 x 18 Jelly Roll pan, sprayed with pan spray. Bake in a 300 degree convection oven for approximately 35-40 minutes.

Makes approximately 24 brownies.
