Thai Chicken Soup

What You'll Need

  • 1 lb Chicken breast, cooked & diced
  • 1/2 lb shiitake mushrooms, sliced
  • 1/2 bunch scallions, sliced
  • 1 Tbsp butter
  • 1 pint coconut milk
  • 4 pints water
  • 1 Tsp ginger, chopped
  • Pinch of salt
  • Pinch of pepper
  • 2 Tbsp cilantro, chopped
  • 1/8 cup lime juice
  • 2 Tbsp chicken base
  • 2 Tsp red curry paste

Preparation

Heat sauce pot and add butter. Saute mushrooms for approximately two minutes. Add coconut milk, water base and chicken, simmer. Add ginger, lime juice and curry paste. Stir well. Add chicken breast and stir well. Add scallions and gently simmer for approximately 15 -20 minutes. Season with salt and pepper to taste. Enjoy!
